Soumbala (or soumbara) is a condiment used in West Africa, known for its strong smell. It is a kind of African carob. It is traditionally made with the seeds of the nere tree, but other seeds may be suitable. Soybeans are increasingly used for this purpose, due to the insufficient production of nere seeds.
